1. Stir-fried tofu with bean paste

Ingredients preparation

Tofu, salt, garlic, light soy sauce, water starch, bean paste, green onion, and vegetable oil.

Method steps

1. Wash the tofu and cut it into small cubes. Cut the scallion whites and green onions into sections. Chop the garlic into minced pieces. Dilute the starch with water and set aside.

2. Add salt to a pot and boil water. Pour the tofu in after the water boils until bubbles appear. After the water boils again, remove the tofu and set aside.

3. Heat the iron pan, pour in oil, add scallion, minced garlic and bean paste, stir-fry until fragrant, then pour in boiling water;

4. After the water boils, pour in the tofu and stir-fry gently and evenly. When the water is almost dry, add the scallion leaves, pour in water starch and cook until it becomes sticky before serving.

2. How to make fried tofu with bean paste

Ingredients preparation

200 grams of tofu, 100 grams of minced beef, 15 grams of green garlic, 20 grams of bean paste, 10 grams of peppercorns, 5 grams of ginger, 10 grams of soy sauce, 5 grams of sugar, 150 grams of broth, and 75 grams of oil.

Method steps

1. Cut the tofu into 2 cm cubes, blanch them in boiling water with a little salt, and then soak them in clean water;

2. Put the dried peppercorns into a dry pan and fry until fragrant, then crush them into powder for later use. Chop the bean paste and mince the ginger and garlic.

3. Add a little cooking wine, soy sauce and pepper to the minced beef and marinate for 15 minutes, then add a little starch and mix well;

4. Heat oil in a wok, add minced meat and fry until golden brown, then add bean paste and fry together, then add minced ginger, soy sauce, and chili and fry until red oil comes out;

5. Then pour in 100 grams of broth, pour in the tofu and cook for about 3 minutes, sprinkle with pepper powder and stir-fry, sprinkle with green garlic and serve.

Tips
