Its characteristics are that the chicken is crispy and boneless, the soup is clear and the bottom is visible, and it is rich in umami flavor with a hint of ham.

1) Kill the living hen, scald it with boiling water, cut open its abdomen, take out the internal organs, esophagus, and trachea, wash them, put them in a pot of cold water and boil them, take them out and wash away the blood. Put the ham feet into a pot of cold water and boil them, then take them out and scrape them clean.

2) Take a large casserole, put in the chicken and ham feet, scoop in 1500 grams of water, add Shaoxing wine, scallion segments, ginger slices, cover the pot, bring to a boil, then simmer on low heat for about 2 hours, until the chicken is tender, remove the lid, remove the ham feet, scallion segments, ginger slices, add fine salt and bring to a boil, then remove from heat.

Operation points:

1) When stewing chicken, you must use a low heat, otherwise the soup will not be clear.

2) If ham feet are not available in the ingredients, you can use winter bamboo shoots, mushrooms, ham and other ingredients instead.

Method 2:

15g red pepper (pointed, dry), 10g green onion, 10g ginger, 10g cooking wine, 5g vinegar, 5g sugar, 3g MSG, 3g Sichuan pepper, 30g peanut oil, 10g sesame oil

4. Spread the fried tomatoes on the rice in the tomato cup. Pour some soup into the rice and let it seep into the rice, it will taste good.

5. Wrap the tomatoes with tin foil, put them in the oven, bake at 170 degrees for 8 minutes, then take them out and eat them.
