Roasted Australian Lamb Leg with Blueberry Sauce

1. Take the lamb shanks out of the freezer and move them to the refrigerator to thaw naturally (this takes one day).

7. Prepare fresh blueberries and mix blueberry jam with warm water. Prepare the almonds by crushing them with a rolling pin.

8. Preheat the air fryer to 180 degrees for 5 minutes, then put the potato strips into the frying basket, set the time to 10 minutes, then take out and shake, set the time to 5 minutes and take out.

9. Put the marinated Australian lamb legs into the air fryer (since the potato strips have just been fried, there is no need to preheat. If the fryer has just been turned on, it needs to be adjusted to 160 degrees and preheated for 3 minutes).

10. Close the air fryer and cook at 160 degrees for 10 minutes. Then, observe how much time the lamb leg needs to cook so it is easier to see.

11. Raise the temperature to 200 degrees and cook for another 10 minutes. (You can pierce the lamb leg with the tip of a knife to see if it is cooked through. If blood still comes out, it means the lamb is not cooked yet.)

12. Then pour the blueberry jam on the roasted lamb legs, close the frying pan and simmer for 5 minutes to allow the lamb to absorb the flavor of the jam. Place cherry tomatoes, chamomile, fresh blueberries and French fries on a plate. Take out the lamb legs, pour blueberry juice on them, sprinkle with chopped almonds and serve.
