How to make spring dishes

1.1 Wait until one side of the egg skin is fried and there is a gap between it and the pan before scooping it out. Generally, you only need to fry one side.

2.2 Hanging egg skin. The eggs used in the dish are egg skin shreds. That is, beat the eggs first, add a little salt, and let the egg liquid solidify when heated. Use low heat and brush a thin layer of oil in the pan or wipe off excess oil with a paper towel to avoid burning the eggs. Then pour in a large spoonful of egg liquid and fry over low heat. Pour the same amount of egg liquid each time. The egg skins that are hung out will be of the same size. Cut half of the egg skin into shreds for later use, and save the other half for making egg pancakes, which you can roll with vegetables and eat later.

3. After soaking, blanch the fungus, cut into shreds and set aside. Pinch off the two ends of the mung bean sprouts, blanch them in cold water, and set aside. Cut the chives into inch-long pieces; cut the red pepper into shreds; cut half of the egg skin into shreds and set aside. The above five ingredients are already very easy to cook. It can be quickly served in the pot.

4. The whole cooking time is very short. After the oil is hot, stir-fry the pan with shredded ginger, then add various vegetables in order of ease of cooking, stir-fry each vegetable twice, and finally add salt and MSG before serving.

5. When eating, roll it with an egg pancake
