How to make eggplant mushroom shrimp balls

1. Prepare all ingredients.

2. Remove the prawn heads, remove the shrimp threads, peel off the tail shells, and leave the last piece of shrimp shell.

3. Marinate the shrimps with egg white, light soy sauce and starch for 10 minutes.

4. Wash the shiitake mushrooms in water.

5. Cut the washed shiitake mushrooms into slices.

6. Add water to the soup pot and bring to a boil. Put the shiitake mushrooms in the boiling water and blanch them for 1 minute.

7. Take out the blanched shiitake mushrooms, drain the water and set aside.

9. Use chopsticks to pick out the marinated shrimps, put them into the pot and stir-fry, leaving the marinated soup in the bowl.

10. Stir-fry the shrimp for 1 minute.

11. After the shrimps turn red, add the mushrooms and stir-fry.

12. Stir-fry for about 1 minute, pour in tomato sauce and mix well.

13. Pour the soup for marinated shrimps into the pot and mix well, then turn off the heat and serve.
