1. Put fresh meat into water, add ginger, green onion and peppercorns and cook until it is 70% cooked. Set aside. I use cooked and cooled meat here, but in fact, freshly cooked pork belly will be the most fragrant.

2. Cut the Guokui into small pieces for later use

3. Heat the pan with cold oil. When the oil is hot, add the fat and stir-fry quickly to remove excess oil. When the meat slices start to curl up, add the bean paste and stir-fry until fragrant. Then add other seasonings and continue stir-frying.

4. When the oil has soaked into the meat, pour in the cut Guokui and continue to stir-fry. Remove from the pan when the Guokui is fully coated with oil and becomes soft and delicious.
