(1) First, wash the bull whip, cut the skin and blanch it in boiling water. After taking it out, tear off the skin, wash it and put it in the pot. Put 2.5 kg of water in the pot, add 50 grams of green onion, 25 grams of ginger and peppercorns, and cook until the bullwhip is soft. Take it out and break it in half, remove the urethra and cut it into 4-5 cm long segments.

(2) Heat the cooking oil in a wok over high heat. Add 50 grams of scallions, 25 grams of ginger and garlic cloves and stir-fry until fragrant. Add cooking wine, soy sauce, chicken broth, sugar, MSG and salt. Use sugar color to turn the soup red. Add the bull whip into the soup and simmer over low heat until the soup is dry and thick. Remove the scallions and ginger, thicken with wet starch and drizzle with pepper oil before serving.

2. Cordyceps bull whip soup:

Ingredients: 500g of bull whip, 1000g of beef broth, 20g of cordyceps, 10g of wolfberry, 2g of salt, 2g of MSG, 20g of scallion and ginger, 20g of Shaoxing wine, 10g of sesame oil, a pinch of white pepper

Production:

(1) Use a knife to carve the soaked bull whip into several chrysanthemum shapes. Blanch it repeatedly in beef broth until the bull whip has no fishy smell.

(2) Place the bull whip in a small bowl, add clear soup, and simmer for 1 hour. Then add processed cordyceps, wolfberry, green onion, ginger, and Shaoxing wine, and simmer for another hour until the bull whip is soft, the cordyceps is glutinous, and the wolfberry flavor is overflowing. Pour out the soup, take out the bull whip and pour it into a small soup plate.

(3) Heat a wok, pour in beef broth, add salt, MSG, pepper, and sesame oil, adjust the taste, and pour into a soup dish.

Features: The soup is refreshing and mellow, the bullwhip is soft and tender, the cordyceps is good for skin and body, and the wolfberry is the best for eyesight. It is a good tonic with excellent nutrition.

3. Wolfberry bull whip soup:

Ingredients: water, bull whip, chicken oil, ginger, pepper, cooking wine, wolfberry, salt, MSG

4. Chinese wolfberry, chrysanthemum and bullwhip soup:

Main ingredients: Bull whip from young bull from Inner Mongolia (Niu Chong)

Accessories: a chicken leg, wolfberry, onion, ginger, cooking wine, etc.

Boil the fresh bull whip in clean water until it is tender, then take it out and cut it into two pieces along the urethra. Remove the urethral membrane, scrape and clean it, make chrysanthemum-shaped cuts and cut it into sections. Leave the bottom oil in the spoon, sauté scallions and ginger, add cooking wine, add chicken soup, add processed wolfberries, put in salt and other seasonings and bring to a boil, skim off the foam, add bull whip flowers, cook until the flavor is absorbed, then thicken with starch, drizzle with cooking oil, serve in a spoon and serve.
