How to make snow pear and Sichuan Fritillaria soup

Chuanbei is a common Chinese medicinal material. Whether used as medicine or as food, it is widely used. As one of the fruits that clears away heat, snow pear is very nutritious when added to Sichuan Fritillaria to make soup. The method is simple, and if you are interested, you can also add other ingredients, such as black fungus.

1. Crush the Fritillaria cirrhosa and divide it equally into the pear pit, then place rock sugar on top. Peel the pear, cut it in half near the stem, and use a spoon to hollow out the core. Cover with the other third and secure with toothpicks. Put it into the stew pot and add clean water to just cover the pear. Simmer in water for two hours. For nourishing pear soup, the pears must be peeled to avoid affecting the taste.

2. Soak the Fritillaria cirrhosa in clean water for about ten minutes. The water used to soak the Fritillaria cirrhosa is slightly bitter and should not be used. Remove the yellow roots of Tremella fuciformis, tear it into small pieces and wash them. Wash the pears and cut them into small pieces about 2 cm in size. (The whole body of the snow pear is a treasure, so don’t throw away the pear skin and core.) Put the snow pear, Sichuan loquat, white fungus, and rock sugar into the electric pressure cooker, and add clean water to cover the ingredients. Turn on the power and set the pressure cooker to high pressure for 20 minutes. It is ready to eat after the pressure cooker finishes working and releases the pressure.

3. Soak the white fungus in water, remove the roots and stalks, then tear it into small pieces by hand and set aside; wash the Fritillaria cirrhosa and set aside. Wash and peel the pears, remove the core and seeds, and cut into small pieces with a knife for later use. Take a stewing pot, put the pear, white fungus and Fritillaria cirrhosa into the pot, then add water and rock sugar, cover the mouth of the stewing pot with a layer of plastic wrap, put it in a steamer and steam it over medium heat for 1 hour before taking it out.

4. Soak Fritillaria cirrhosa in clean water for about 10 minutes, and discard the water. The water used to soak Fritillaria cirrhosa has a slightly bitter taste. Wash the pear and cut it into bite-sized pieces. Tear the white fungus into small pieces. Put the rock sugar and soaked Fritillaria cirrhosa into a large bowl (microwave safe) and pour in enough water to cover the ingredients. Cover the surface of the bowl with a layer of plastic wrap (no need to pierce holes), put it in the microwave, and beat it on high heat for 7 minutes.
