How to make red oil sour soup noodles

1. Soak the golden needle vegetables and black fungus in water and cut into small pieces for later use

2. Wash the pork and cut into cubes. Marinate with cooking wine

3. Heat up a pan with oil. Add diced meat and stir-fry until oil comes out

4. Add soy sauce, cooking wine and sugar to season and reduce the sauce. Serve for later use

5. Dice carrots and potatoes. Add oil and stir fry

6. Add the chopped black fungus and golden needles and stir fry

7. Add water until it is covered. Add soy sauce, salt, sugar and chili oil to taste. Bring to a boil and simmer over medium heat for 15 minutes. Add vinegar to taste

8. After the sour soup is ready, add the fried diced meat and mix well for later use

9. Add flour, salt and water to knead into a dough that is slightly softer than dumpling skin. Roll it into dough pieces. Apply oil. Leave it in a bowl for 30 minutes

10. Cut the dough into strips. Stay awake for a little longer

11. Then stretch each strand thinner and longer. For the noodle making process, please refer to the potato sauerkraut noodles I posted before.

12. Pull while putting it into the pot. Add hot water 2-3 times during the process. Cook until done

13. The noodles that were fished out~

14. Mix and eat. I added extra chili to mine.
