The pig's trotters should be stewed until 80% cooked. If they are too cooked, a lot of gelatin will be produced during the frying process, affecting the quality of the dish. After adding the pig's trotters, stir-fry quickly and continuously. Otherwise the gelatin in the pig's trotter will cause the pot to burn. After the dish is served, wash the pot quickly while it is still hot, otherwise the gelatin will stick to the pot and make it difficult to clean.
