How to make spicy and sour kidney

1. Peel off the inner membrane of the pork loin, cut it open to remove the fascia and urinary gland inside, wash it and cut it into cross-shaped slices.

2. Then add cornstarch into the chopped kidney and mix well.

3. Cut the ginger into shreds.

4. Cut the pickled peppers into sections and set aside.

5. Slice the pickled radish and cut the beans into sections for later use.

6. Slice the garlic.

7. Cut the garlic shoots into sections.

8. Bring water to a boil and blanch the garlic shoots. (Pick it up as soon as it goes into the water)

9. Remove from the water and set aside.

10. Heat the oil in a wok until it is 80% to 90% hot (the fire must be high). Add the shredded ginger to the kidney mixed with cornstarch and fry together.

11. Move quickly and use high heat to stir-fry until the kidney changes color. Pour the seasoning in the bowl into the pot and stir-fry four or five times.

12. Then pour in the chopped ingredients (pickled cabbage, pickled beans, pickled peppers, chopped garlic slices and blanched garlic shoots), stir-fry for four or five times and prepare to serve.

13. Then serve on a plate.
