How to cook spicy tofu and crucian carp

1. Clean the crucian carp, dry it, and make a few cuts on both sides of the fish; cut half a box of tofu into cubes of appropriate size; cut the ginger and garlic into shreds, and tie the green onions into a knot

2. Spread a thin layer of flour evenly on both sides of the crucian carp.

3. Heat the oil in a pan until it is boiling, add the crucian carp and fry both sides until slightly browned.

4. Place on a plate and set aside

5. Heat some oil in a pan, add shredded ginger and minced garlic, stir-fry briefly, then add Pixian bean paste and stir-fry until the paste is soft.

6. Add 2 bowls of boiling water and put the crucian carp into the soup

7. Pour a proper amount of cooking wine, a little bit of rice vinegar, and a proper amount of fresh soy sauce along the fish body.

8. Continue to evenly add appropriate amount of sugar to the fish

9. After the fire is boiled, add tofu on both sides of the soup. Remember not to flip it (it is easy to break), but shake the bottom of the pot. Keep boiling over high heat. During this time, use a spoon to scoop the soup over the fish to make it taste good. Add a little chicken essence.

10. When the soup is slightly dry, pour in an appropriate amount of starch water, shake gently and bring to a boil.
