If the fire is too high and the water evaporates quickly, you can add water in the middle, about 15 ml each time, which is about 1 tablespoon. The number of times you add water should not exceed twice. It tastes better if you stir-fry it without adding water.

4. When the fish is 80% cooked and cooked through, you can add salt and chicken essence. If you like crispier food, this is fine. But my husband likes to eat it softer, so I continue to fry it.

5. When you stir the beans with a spatula, if you don't feel the beans are hard and they look obviously wilted, they are basically fully cooked. You can pick up a small piece to taste it. If it has the taste you want, turn off the heat immediately. Generally speaking, the taste will be a little raw after it comes out of the pot, so when tasting what's in the pot, it's better to have a slightly rawer taste than you want.
