How to cook boiled loach

6. Add appropriate amount of water or broth and simmer on low heat for 10 minutes to allow the flavor of the ingredients to release.

7. Add the cleaned loach, and then add a little cooking wine, light soy sauce, and oyster sauce and simmer over low heat.

8. Add a little bit of sugar after 10 minutes, until you can no longer taste the sugar (the purpose of adding sugar is to increase the thickness of the dish. There is no need to add salt to this dish because the bean paste and kimchi are both salty)

9. Add the chopped scallions and cook over high heat until the sauce is absorbed. Be careful not to burn the pot, as loaches can easily stick to the pot (do not add chicken essence or anything like that, as loaches are very delicious on their own).

10. Remove the dish from the pot and serve it in a bowl
