Garlic Flammulina Mushroom and Eggplant Puree

2. Add appropriate amount of Shaoxing wine and pepper to the meat paste and let it sit for about 15 minutes.

3. Remove the seeds from the horn pepper and cut into strips; cut the eggplant into dice and set aside. Finely dice garlic cloves

4. Boil water in a casserole and blanch the cut eggplant pieces. If you don't like the eggplant cubes to absorb too much oil in the following steps, you can cook them in boiling water for 5-10 minutes until they are soft.

5. In a pan over medium heat, stir-fry the chopped peppers until fragrant, and add Qixian bean paste until red oil comes out.

6. Add the minced meat from step 2 to the shredded peppers and stir-fry over medium heat until 80% cooked.

7. Cut the enoki mushrooms into three sections, blanch them in boiling water for 2 minutes, then add them to the minced meat and stir-fry.

8. Then add the eggplant pieces, stir-fry over medium heat for 5 minutes, add two spoons of water and cover the pot, and simmer for 10 minutes.

9. Serve the eggplant and meat puree from step 8, but remember to sauté the minced garlic before serving! When the finely chopped garlic is fried until golden, you can smell the fragrant garlic aroma! Turn off the heat!

10. Sprinkle the sautéed garlic and shredded pepper on the eggplant and meat puree. It’s so fragrant and you can serve it now! !
