2. Blanch it in boiling water and remove the hair on the elbow skin with tweezers.

3. Apply dark soy sauce and light soy sauce evenly on the blanched pork elbow and give it a light massage.

4. Put a proper amount of oil in the pan, put the pork elbow coated with sauce into the pan and fry it on low heat until the skin of the pork elbow starts to bubble and wrinkle. (It’s the same as fried salty pork)

5. The fried pork elbow looks bigger.

6. Prepare spices: cinnamon, star anise, bay leaves, pepper, fennel, etc.

7. Pour water into the pot, add dark soy sauce, cooking wine, onion, ginger, garlic, star anise, rock sugar, cinnamon, bay leaves, fennel, put in the elbow, bring to a boil over high heat, and simmer over low heat for about an hour and a half.

8. At this time, the surface of the elbow should be bubbling like chicken feet. Most of the soup in the pot has been burned away. Cook on high heat to reduce the soup appropriately. Taste the flavor. If it is too bland, add some light soy sauce or salt. It’s up to you.

9. Take out the elbow and place it on a plate, pour the original soup on it, put a proper amount of oil in another pot, add peppercorns and dried chilies, stir-fry until fragrant, then pour it on the elbow and you can start eating.
