Onion soup recipe

1. Ingredients: 4-5 servings• 1 large white onion• 1 large red onion• 4-5 Shallots, which are very small onions. It’s best to have them, but forget it if you don’t have them.• 1 leek, green onions are also delicious• 30g unsalted butter• 2tbs olive oil, preferably EXV olive oil• 1/2cup dry red wine• 5cups broth, you can use the one bought from the supermarket, add water if the broth is not enough• 1tsp brown sugar• 1 clove of garlic, crushed• A few slices of Baguette• Some Cheddar cheese or Gruyère cheese• 2tbs All-purose flour, medium-gluten flour, or the most ordinary flour• Salt and ground black pepper

2.1 Add various onions, garlic and a pinch of salt, stir-fry for 2 minutes until evenly coated with fat.

3.2 Heat the olive oil and butter in a pan and wait until they start to bubble slightly.

4.1 Pour in the wine, scrape the sticky pieces on the bottom of the pot and dilute it in the juice, wait for the wine to evaporate and the acidity to dissipate, about 2 minutes, then add the broth, cover and simmer on medium-low heat for 30 minutes, open the lid and season with salt and black pepper, remember to taste it.

5.2 Cover and cook over medium-low heat for 30 minutes, stirring every 10 minutes. Don't use too high a heat, caramel color is sweet, and burnt color is bitter. Then sprinkle in flour and brown sugar and stir-fry until the onions are evenly coated, about 1 minute.

6. Take advantage of this time to toast the bread slices. Preheat to 200 degrees and bake until they are almost golden brown. The time is not fixed and depends on the specific bread. You can brush them with olive oil, garlic oil, or sprinkle some thyme, depending on your preference. Meanwhile warm the baking tin in the oven.

7. After the soup is ready, take out the baking tin, pour in the onion soup, add a slice of bread, cover with a thick layer of cheese slices, put it back in the oven and bake the cheese a little.

8. To be honest, in winter, you just need a can of this kind of wine in front of you, and a few more slices of bread. Drink it, dip it in it, and eat it. It will warm your stomach and heart. Enjoy!
