How to make meatballs and eggplant casserole

The deterioration of living environment and the increase of study and work pressure are slowly eroding our health, so health preservation actions are urgent. There are many ways to maintain health, and the simplest one is diet. Next, I will introduce to you how to cook meatballs and eggplant.

1.12 Main ingredients: long eggplant, pork filling. Auxiliary ingredients: red pepper, shallot, ginger, garlic. Seasoning: light soy sauce, sesame oil, pepper, salt, chicken powder, cooking wine, broth, water starch, cornstarch.

2.21 Wash and mince the green onion; mince the ginger; cut the red pepper into shreds and set aside.

3. Add salt, pepper, chicken powder, soy sauce, sesame oil and cooking wine to the meat filling, mix well and marinate for 15 minutes.

4. Wash the eggplant and cut into dice.

5.1 Place the pot on the fire, pour in oil and heat it until 70% hot, add the eggplant and fry until golden brown, then remove from the pot.

6.2 Coat the eggplant pieces with a thin layer of cornstarch.

7. Use a spoon to scoop the marinated meat filling into small balls and evenly coat them with a layer of starch.

8. Fry in 70% hot oil until golden brown, then remove and set aside. (You can shake the pot to shape the meatballs, no need for a spoon or spatula)

9. Leave some oil in the pan, add minced ginger and shredded red pepper and stir-fry until fragrant.

10. Add the eggplant meatballs and appropriate amount of broth

11. Add 2 spoons of light soy sauce and a little sugar, and simmer until the soup boils.
