How to make meat-baked eggs

1.1 Put a little oil in the pot, add the minced pork and stir-fry until it changes color, add Pixian bean paste and minced ginger and garlic and continue to stir-fry, add a little sugar to enhance the flavor

2.2 Chop ginger, onion and garlic, soak fungus and dice, soak mushrooms and dice for later use

3. Add black fungus and shiitake mushrooms and stir-fry briefly. Then add a little soy sauce and a little water, bring to a boil, and thicken with water starch (you can also add two drops of balsamic vinegar if you like)

4. While the meat sauce is cooking, use another pan to fry the eggs: first beat the eggs, then add 2 to 3 spoons of slightly moistened cornstarch (cornstarch) and mix well.

5. Put a little more oil in the pan, scoop up half of the oil when it is hot, then pour the egg liquid into the pan, and drizzle the other half of the hot oil on the surface (or if it is troublesome, you can also fry the eggs directly, but don't fry them too long, otherwise they will not taste good) until golden brown and then serve

6. Pour the prepared meat sauce on the eggs and sprinkle with chopped green onions.
