1. Pour a spoonful of oil into the pot and turn on high heat. Heat the pot to 180℃ and put the chicken legs, skin down, into the pot.

7. Pour in appropriate amount of honey and maltose. (A 1:1 ratio is best. Ordinary maltose is fine here, and water malt is not needed.)

8. Continue to fry over low heat until all the food is coloured.

9. Place the blanched Chinese lettuce and chicken on a plate, sprinkle with white sesame seeds, and then pour the sauce from the pot on top.
