After the eggplant is peeled, the trace element iron in it will be oxidized by the air and easily turn black, which may affect the body's absorption of iron. Therefore, it is best not to peel the eggplant when eating.

Eggplant is cold in nature and is more suitable for people who are prone to prickly heat and boils, but people with weak spleen and stomach and asthma should not eat too much. Eggplant contains very low calories, so the elderly and obese people may wish to eat it often.

4. How to cook minced meat and eggplant

Ingredients: 3 eggplants, 1 shallot, 3 cloves of garlic, 100 grams of minced pork, 2 spoons of soybean paste, 2 spoons of light soy sauce, 1 spoon of cooking wine, some five-spice powder, 1 teaspoon of sugar

Preparation method:

1. Cut the eggplant into long strips, then add appropriate amount of salt, mix well, and marinate for 15 minutes. The advantage of doing this is that a lot of water in the eggplant will come out. Then squeeze the eggplant hard with your hands to remove the water, put the eggplant on a kitchen towel, and wipe the water on the surface. In this way, when frying later, there will be no conflict between water and oil, and hot oil will not splash out.

2. Chop green onions and minced garlic. These two ingredients are essential. Green onions and garlic play a very important role in the whole dish.

3. After the pan is hot, add cooking oil and fry the eggplant until soft. This step will take about a few minutes. After it is soft, place it on a plate and set aside. This amount of oil is about three times the amount used for normal stir-frying. If you put less oil in the stir-frying step, it will be difficult to make the eggplant soft. Although it feels like there is a lot of oil, compared with deep-frying eggplant, this amount of oil is still much smaller.

4. After the eggplant is served, there is still a little oil in the pot. Use this base oil to fry the minced meat until the minced meat turns white.

5. Add chopped green onion, soybean paste, soy sauce, five-spice powder, sugar, and cooking wine. Don’t use less ingredients. Add according to the recipe I gave, otherwise the taste will not be perfect.

6. Stir-fry quickly and evenly. In fact, the meat sauce is already delicious at this time. Just pair it with a bowl of noodles and it will become fried noodles.

7. Pour the previously fried eggplant into the pot and stir-fry quickly and evenly. The delicious minced meat and eggplant sauce is ready.
