2. Make tea gall

Hong Kong-style milk tea is quite particular about the choice of tea. It uses a mixture of black tea and some other teas. This can be changed according to personal taste. The amount of tea added is also related to the concentration of the tea flavor you like. Generally speaking, a stronger one is better, otherwise the milk flavor cannot be suppressed.

3. Add water and brew milk tea

Measure 720ml of water into the electric kettle. Because there will be losses due to evaporation, I measured 20ml more. After the water boiled, pour it into the tea. In order to allow the tea to be fully expanded by the water, I put the tea directly into the kettle and let the water pour directly into it. Then brew the tea. This time you need to use a tea strainer (if you don’t have a tea strainer made of cotton cloth, you can use the coffee strainer in the electric coffee pot). The so-called "tea bumping" means pouring tea from a high place into another container. The purpose is to allow the tea to fully come into contact with the air. The final product contains air and tastes better. Place the tea strainer directly on the mouth of the pot, pour tea from another container from a high place, and try to make the tea leaves bubble. Bump it back and forth 5 or 6 times. The color of the tea will be obviously darker after bumping, and the temperature of the tea will also be lower.

4. Baked tea

The next step is to bake the tea. Put the tea leaves on the fire and cook over the lowest heat until it is slightly boiled. Then turn off the heat, cover, and simmer for 5 minutes. To make the tea more fragrant and smooth, you need to add two raw egg shells to the tea in this step. Break them into pieces and put them in the tea. After the baked tea has been boiled 5 or 6 times, it can be set aside for later use. It is best to place it near the fire to keep the temperature.

5. The milk that goes with milk tea is crucial

Measure 300ml of milk, put it on the fire and cook over the lowest heat. Because the milk is relatively thick, it is best to stir it constantly to avoid it getting burnt at the bottom. Cook until the milk is slightly boiled, turn off the heat, and pour the tea into the milk from a high place. You're done.

Precautions

The ratio of tea to milk is 7:3, which is made according to the final product of 1000ml of milk tea. Because you need to stir the tea, the choice of container is critical. You need to choose one that can be boiled directly on the fire, and it should be light and convenient to pour the tea out.
