How to make smokeless scallion fish

1. Wash and cut hairtail fish and green onion into sections, and spread a layer of green onion on the bottom of the pot. I used a wok this time, but a casserole would be better.

2. Then add the hairtail.

3. Add another layer of green onions.

4. Take a small bowl, put in light soy sauce, dark soy sauce, sugar, lemon juice or vinegar, and water and mix well. Due to food safety issues that are reported from time to time, I now try to use raw materials as much as possible and use less processed seasonings, such as using lemon instead of vinegar.

5. Use a spoon to pour the prepared seasoning on the fish, making sure the seasoning covers the fish. I used less seasoning this time, so I had to turn the fish over during the cooking process.

6. After boiling over high heat, turn to low heat and simmer for about half an hour, then turn to high heat again to reduce the sauce. This is the finished picture. The roasted onions have the flavor of fish and sauce and are particularly fragrant.
