1.1 Add a little water (or oil) and crushed rock sugar to the pot and stir-fry over medium-low heat until it turns red, which is called sugar color. Then pour in clean water (or broth), and then add soy sauce, ginger, pepper, white wine, star anise, cardamom, nutmeg, cinnamon, bay leaf, and galangal. Bring to high heat and then simmer on low heat for half an hour. Once the aroma comes out, you can add the pork chops.

2.2 Marinate the pork chops with white wine, soy sauce, ginger slices and green onions for about half an hour in advance.

3. Bring to a boil over high heat, then turn to medium-low heat and simmer until the pork chops are well-seasoned after about half an hour. Then turn off the heat. After removing the scallion segments, the marinade can be stored in the refrigerator for next time.

4. Finally, take out the pork chops and place them on a plate.
