Method: 1. Wash the snails and drain the water

2. Wash and cut all ingredients and set aside

3. Add more oil than usual to the pan and stir-fry ginger, garlic and chili.

4. Then pour in the snails and stir-fry for a while

5. Pour in appropriate amount of cooking wine and stir-fry evenly.

6. Pour in appropriate amount of soy sauce and stir fry evenly

7. Add appropriate amount of salt and stir-fry evenly

8. Pour appropriate amount of water along the edge of the pot and cook for 1-2 minutes

9. Finally, add chicken essence and mint and stir fry evenly.

When buying snails, be sure to select them carefully. If there is a bad snail in the middle, it will affect the taste of the whole dish. Choose snails with green shells, as the meat is tender and the fibers are tough. The meat of large ones is old and difficult to taste, and the small ones are not easy to suck out. Medium-sized ones are best.

Put the snails in a plate of water in advance and add a few drops of oil into it. This will make the snails cleaner. The tail of the snail is usually cut off to make it easier to eat.
