How to cook beef brisket with rice jelly

1. Cut the beef brisket into small cubes of about 3cm, cut the rice jelly into small cubes of about 2cm, cut the green pepper and onion into small cubes, slice the ginger, and roll the green onions into bunches.

2.1 Heat about 60g of oil in a wok until 70% hot, add about 20 peppercorns, 4-5 dried chilies, and chopped ginger, scallions, and garlic into the wok and fry.

3.2 Put water in a small pot and bring it to a boil. Put the cut beef brisket in the boiling water and remove it for later use.

4.1 Cook on high heat until the pressure cooker starts to steam, then turn down to low heat and cook for about 25-30 minutes (20 minutes is enough for people with good teeth)

5.2 Add the blanched beef brisket into the wok and stir-fry until the meat turns golden brown. Scoop up the stir-fried meat (leave the oil in the pot) and put it into the pressure cooker. Pick out the garlic and do not put it into the pressure cooker together. Add a tablespoon of Pixian bean paste to the oil in the wok and stir-fry until the oil turns red. Shovel the bean paste and oil into the pressure cooker. Add a tablespoon of dark soy sauce, a tablespoon of braised sauce, half a teaspoon of thirteen spices, a little black pepper, 2-3 star anise, half a teaspoon of sugar, and a small bowl of water.

6. Wash the wok, add a little oil, stir-fry the chopped onions and green peppers, scoop them up for later use, put the pressed beef brisket in the wok, and then add the chopped rice jelly and cook for about 5 minutes

7. Add the fried onions, green peppers, and half a teaspoon of MSG and serve. Sprinkle some coriander on top.
