How to make dumplings with eggplant and meat

If you want to make this dish well, you need to prepare the vegetables and necessary things before cooking. Below we will introduce to you the method of making eggplant and meat dumplings. You must try it after reading it.

1. Prepare appropriate amount of flour.

2.1 Peel the eggplant and grate it into shreds, mix it with 1 teaspoon of salt and marinate for 5 minutes. Squeeze out excess water with your hands and chop the green onion and ginger.

3.2 Add water to the flour and stir until it becomes snowflake-like. Knead it into dumpling dough with your hands, cover with wet cloth and knead again for 15 minutes.

4.1 Roll the dough into strips on the chopping board and divide it into small pieces. Flatten the dough and shape it into dumpling skins.

5.2 Add 1 teaspoon of salt, dark soy sauce, a little bit of sugar, pepper, cooking wine, dumpling filling seasoning, and chopped green onion and ginger to the pork filling and beat in one direction. Add shredded eggplant to the meat filling, add sesame oil, and stir evenly to make dumpling filling.

6. Take a piece of dumpling wrapper and put the filling in the middle.

7. Make a small bowl shape with your left hand and pinch the edge of the dumpling with your right hand to make a crescent-shaped dumpling.

8. Wrapped dumplings.

9. Add enough water to the pot, bring it to a boil over high heat, put the dumplings in, and use a slotted spoon to gently push the dumplings along the edge of the pot so that the dumplings turn around without sticking to the bottom of the pot. When the water in the pot boils, pour in half a bowl of cold water, and then pour in half a bowl of cold water again when the water boils again. Repeat 3 times. Cook until the dumplings are bulging and the skin bounces back quickly when you press it with your hand. Take them out immediately and eat them with vinegar or chili oil according to your preference.
