How to make small potatoes with sauce

Potatoes are a kind of food that many people like to eat. They are not only nutritious and taste good, but also can be cooked in a variety of ways. Marinated potatoes with soy sauce is a marinated dish from Northeast China and the Korean ethnic group. The two ethnic groups may have different ways of cooking this dish: Koreans add more chili peppers, while people in northern China may or may not add chili peppers. Northeastern China’s small potatoes with sauce are very famous.

Pickled potatoes are a very common side dish for people in Northeast China. I remember when I was a child, I would harvest potatoes grown at home. My mother always picked out the small potatoes, which we called "potato babies". In winter, she would make pickled potatoes and eat them as pickles, which were much more delicious than other pickled vegetables. However, at that time, only soy sauce was used, and some sweet potato stalks, celery, peppers, etc. were added, which were all homemade. Now, it is usually cooked with bone soup or some pork skin. The taste is certainly different. The other day I saw someone selling small potatoes at the market, and they immediately reminded me of pickled potatoes, so I quickly bought some to take home to satisfy my craving!

Methods/Steps

1. Choose smaller ones with uniform size and smoother skin. Wash it clean (don't peel it)

2. Put more oil in the wok, add more soy sauce after it is fried, and then put in the potatoes, trying to make sure every potato is exposed to the oil.

3. Add enough water to cover the potatoes. Then add lean pork (in larger pieces to avoid it breaking up during cooking) or beef, depending on your taste. I recommend the pork. Add salt as needed. You can also leave out the meat, it depends on your preference.

4. Regarding the amount of salt, if you want to make pickles, add more.

5. If you like spicy taste, you can add some chili. Free to choose the order. You can do it when the pot is sautéing, or after adding water. At this time, you can put more whole peppers, so that the peppers themselves will taste good.

6. If you have dried sweet potato stems, put them in when cooking, and it will taste even better. (It’s just hard to buy)

Finally, emphasize that after boiling over high heat, simmer over low heat. The longer the time, the better it tastes, about 2-3 hours is appropriate.
