How to make natural yeast salt and pepper sesame biscuits

For animals, eat is a verb. But for us humans, it's not just that. When eating, there are many aspects to consider. It has to be delicious and good for the body. And if you can do it yourself, both aspects will be satisfied. Now, let me introduce to you the method of making natural fermented pepper and salt sesame biscuits.

1. Salt and pepper puff pastry: Mix all ingredients

2.1 Scallion oil: Cut the scallions into sections, fry the scallions in hot oil until golden brown.

3.2 Mix well

4.1 Mix to form a smooth dough

5.2 Mix the natural yeast with water, then add flour and other ingredients

6.1 Divide the dough and puff pastry. I divided it into 10 portions. The amount can be based on personal preference, each portion of dough is wrapped with a portion of puff pastry

7.2 Cover with a damp cloth or plastic wrap and let the dough rise for about 20 minutes.

8.12 Wrap in the pastry and pinch the opening to seal. No need to worry about aesthetics, just pinch it

9.21 Roll out the dough

10. Fold the top and bottom in half

11. Fold it in half again

12.1 Roll the dough vertically again

13.2 After each small dough is processed, let it rise for 5 minutes

14. Apply scallion oil with your hands and sprinkle some pepper and salt powder evenly

15. Fold the upper part to the middle

16. Fold the lower part towards the middle

17. Then continue to open it and turn it over

18. Brush with a little water and dip in lots of sesame seeds

19. The finished sesame cakes need to be placed on silicone paper, leaving some space between them. Place in a warm and humid place and let rise for about 20 minutes

20. Place a baking rack on the lower middle layer of the oven and place a stone slab on the baking rack. Preheat to 220 degrees. Because the stone slab needs to absorb a lot of heat, the oven should be preheated some time in advance. If the stone slab is not hot enough, the bottom of the sesame seed cake will not be crispy enough. Move the sesame seed cake to the stone slab (with the paper) and bake for about 15 minutes. In the last 5 minutes, you can turn on the fire to make the surface of the pancake crispy. I personally feel that this tastes better! (If the fire in some small ovens is very strong and the sesame cakes are golden in color, there is no need to bake them separately. You can adjust it yourself!)

The method of making natural yeast salt and pepper sesame cakes has been introduced. You may not have mastered it yet, but you must practice more. You can take some time to go to the kitchen and make it.
