If using a bread basket, place the opening facing upwards. Loosely wrap in plastic wrap and place in the refrigerator to rest for 8-12 hours.

2.2 Add water to coarse bread crumbs, whole wheat and rye flour and mix roughly. Add natural yeast, stir well, and let it rest for 20 minutes. Add salt and cook at low speed for 2 minutes, then at high speed for 5 minutes. Although the finished dough cannot be pulled into as beautiful a film as white flour, it can still be pulled into a certain film. The dough is soft and very elastic. Place in a basin sprayed with oil. Cover with a damp cloth and let rise for 1 hour.

3. Take the dough out of the refrigerator and place it at room temperature for final fermentation until its volume increases significantly. It takes about 2-4 hours. Score the surface of the bread. Preheat oven to high.
