Lemon Tear Bread Recipe

1. Mix the flours in material 1 evenly, add cold water and knead into a smooth dough, let it rise for 30min-1h, wash out the gluten with clean water and set aside

7. Cut the dough into 6 even parts along the length direction and place them into the mold with the cut side facing up. Cover with plastic wrap and let it rise in a warm place (I put a large cup of boiling water in the oven and put the mold with the dough in to rise), until the dough rises to twice its size and bounces back when pressed. Bake in a preheated oven at 175 degrees for 30-35 minutes, until golden brown. Remove from the mold and let it cool for 10-15 minutes before serving.
