1. Cut the lettuce into thin strips and set aside; put the eggs in a bowl and beat them evenly; put the cornstarch and bread crumbs in a plate and set aside

2.1 Take a prawn and evenly coat it with cornstarch, egg liquid, and breadcrumbs (press it with your hands to fix the breadcrumbs)

3.2 This step is very important: remove the shrimp head and shrimp shell, leaving the tail, then shallowly cut 3 times on the shrimp's abdomen (be sure to be gentle, just cut the shrimp tendons, this step is to prevent the shrimp from curling up due to heat), then use a knife to tap the shrimp's back twice to ensure that all the shrimp tendons are broken, add salt, a little chicken essence, and more black pepper to the processed shrimp body and marinate for 5 minutes

4. Shake off the excess bread crumbs on the shrimps, heat the oil in the pan and insert chopsticks. When small bubbles appear in the middle, turn to medium-low heat, gently put the shrimps in and fry until golden brown, remove and drain the oil.
