Ingredients: 375g river shrimp, 75g green beans, 40g egg white, 3g salt, 2g MSG, 2g cooking wine, 1g sesame oil, 5g starch, 30g vegetable oil

Method: 1. Shell the river shrimp, wash and drain, add egg white and salt, mix well, then pour in cornstarch and mix well.

2. Heat the pan until the oil is 60% hot, pour in the shrimps and stir-fry, then remove from the pan; pour in the green beans and stir-fry, then pour in the shrimps, MSG, and wine and stir-fry, and drizzle with sesame oil before serving.

Jin Yu Man Tang - Fried Shrimp with Corn and Green Beans

Ingredients: 200g large shrimp, 50g fresh mushrooms, 250g corn kernels, 250g fresh green peas, 1 tablespoon vegetable oil, 3g salt, 1 pinch white pepper.

Method: 1. Remove the intestines and mud from the shrimps, wash them, pat dry with paper, and cut into 1 cm square dices. Wash and dry the mushrooms and cut into small dices. Wash the corn and peas and drain.

2. Place wok in center. Preheat over high heat. Pour in oil and heat until 70% hot. Add shrimp, stir-fry for 2 minutes, remove and set aside. When the pan is heated again, add mushrooms and stir-fry for 1 minute; add corn and peas and stir-fry for 3 minutes; add salt and white pepper and stir well; pour the fried shrimps in and stir-fry for 1 minute, then scoop out and serve.

Fried green beans with curry rice

Ingredients: peas, pork, ham, rice, curry powder, soy sauce.

Method: 1. Dice pork and braised sausage.

2. Add oil to the pan, add the diced pork and stir-fry. After the meat changes color, add peas, continue to stir-fry, and add appropriate amount of salt and five-spice powder.

3. When the dish is 80% cooked, add the ham (I added the ham because I want the dish to look better in color, but you can leave it out if you don’t like it), add a small amount of water and cook briefly, then serve.

4. Put the rice in a pot, add a small amount of water, add appropriate amount of curry powder and a small amount of soy sauce (avoid too much to make the rice darker), cook it for a while, stir it to make sure the rice is evenly flavored, and cook until the water is dry.
