How to cook fried tofu and mushrooms

1. King Oyster Mushroom: cut into pieces. Carrots: cut into thin slices. Scallions: cut diagonally. Garlic, ginger, raw chili: mince.

2. Eggplant: cut into pieces, add water to a container (bowl), and soak the eggplant.

3. Drain the eggplant and set aside.

4. Fried tofu

5. Prepare a container (bowl) and add water and ice cubes.

6. After the water in the pot boils, put in the fried tofu and blanch it to remove the oily smell, then remove it after boiling.

7. After taking out the fried tofu, put it in a container (a bowl) with water and ice cubes to cool.

8. After cooling, drain the fried tofu.

9. Cut into eighths.

10. Put it in a container (bowl) and set aside.

11. Heat up a pan with oil.

12. Add garlic, ginger and raw chili pepper and sauté over medium heat until fragrant.

13. Add fried tofu and fry slightly.

14. Add carrots and stir-fry briefly.

15. Add eggplant and stir-fry slightly.

16. Pour in water or broth, then add oyster sauce and soy sauce and stir evenly.

17. Cover the pot and simmer over medium-low heat.

18. Open the lid of the pot halfway through simmering, add the King Oyster Mushrooms and stir, then cover the pot again (sorry, there is no picture of the lid being closed after the King Oyster Mushrooms are added).

19. Simmer until the soup is well-flavored and cooked, then open the lid and add the green onions.

20. Just stir lightly.

21. Place on a plate.
