6. Add sliced ​​ginger and chopped green onion and stir-fry until fragrant.

7. Add cooking wine, oyster sauce, light soy sauce, dark soy sauce, sugar, balsamic vinegar and appropriate amount of water (just enough to match the fish)

Add crucian carp and winter melon slices, add appropriate amount of fine salt and bring to a boil, then simmer on medium-low heat for 10 minutes, simmer on high heat until the juice is reduced (a certain amount of juice should be left), drizzle with sesame oil, sprinkle with coriander and serve on a plate.

9. The fish is fresh and fragrant, and the winter melon is soft and glutinous. It is a dish that goes well with wine and rice.
