How to make cheese beef balls

1.Ingredients: beef tenderloin, lotus root, ginger, and green onion.

2.Ingredients: cheese, egg white, water starch.

3. Wash the beef and cut into thin slices.

4. Chop back and forth repeatedly with the back of the knife. (The purpose of this is to separate the beef fascia)

5. When the beef is minced, scrape it with the back of a knife and you can see a lot of fascia.

6. Continue chopping until the fascia can be removed easily.

7. Use the corner of the knife to slowly move the beef from right to left, a little at a time, to remove the fascia inside.

8. After removing the fascia, chop the beef into meat paste.

9. Chop the lotus root into very fine pieces and add it to the beef (the amount should not be too much, I used half of the one shown in the ingredient picture). Then take a little ginger and green onion, chop them into very fine pieces and add them to the beef.

10. Add 1/2 teaspoon of salt, put on gloves, mix well and stir in the same direction.

11. Add egg white and water starch and continue mixing.

12. Add a few drops of sesame oil and beat thoroughly until firm. (This was too laborious, so I took a photo of the steps and gave it to the child’s father to mix)

13. Grab a handful of beef paste and squeeze it into meatballs with your thumb and index finger. This is not something you can squeeze out just by doing it. You need to pinch it a few times at the base of your thumb and then squeeze it out. Although it is a bit difficult, you will get used to it as long as you practice more. (I always squeeze the balls with my right hand, but it’s hard to squeeze with my left hand because I need to take pictures with my right hand.)

14. Add a piece of cheese into the squeezed meatballs.

15. Then use your thumb and index finger to pull the meatball back in, seal the cheese and squeeze it out.

16. Before putting the meatballs into the pot, boil the water until it is slightly boiling. (In order to avoid the mist from boiling water, I demonstrated how to make the meatballs first and then boil the water)

17. Use your other hand to quickly pull the prepared meatballs into the pot, and continue cooking one by one until the meatballs are cooked through. (When it’s done, there will be a little white foam in the pot, it’s okay, don’t worry. I scooped it off for the clarity of the picture)

18. You can taste the shredded cheese on the cooked meatballs. You can eat them directly or put them in hot pot.
