How to make peony shrimp balls

1. Prepare the raw materials.

2. First put the vermicelli in a bowl and soak it in warm water.

3. Heat oil in a pan, add chopped scallion, garlic and ginger, and stir-fry over low heat until fragrant.

4. Mix all the seasonings except cooking wine together and set aside. (Prepare the seasoning first and mix it well to better blend the complex flavor)

5. Remove the shrimp heads and shells (leave the shrimp tails), then thread them into shrimp balls, put them into a bowl, add 2 slices of crushed ginger and scallion, add 1 tablespoon of cooking wine, mix well and marinate for a while.

6. Take out 2 pieces of egg tofu, cut each into three and cut into 6 small pieces.

7. Place the egg tofu with the cut side facing up and cut it in a cross shape. (Leave 1/3 at the bottom uncut)

8. Place vermicelli in the middle of the plate, put shrimp on the vermicelli, and place the cut tofu next to it.

9. Pour the prepared sauce evenly.

10. Pour the chopped green onion, ginger and garlic that have been stir-fried in the pan, and finally sprinkle with an appropriate amount of chopped red pepper.

11. Put it in the pot and steam for about 3 minutes after the water boils.

12. After taking it out of the pot, use chopsticks to gently spread the tofu into flower shapes, then sprinkle with appropriate amount of chopped green onions.
