How to make braised pig's trotters

1. Appropriate amount of pig’s trotters.

2.1 After the water boils again, add appropriate amount of cooking wine and continue cooking for five minutes.

3.2 Bring appropriate amount of water to a boil and pour in pig’s trotters.

4.1 Light soy sauce, dark soy sauce, bay leaves, ginger slices, garlic, star anise, and 12 pieces of rock sugar.

5.2 Pour it out, wash off the foam, drain the water, and cut the large pieces of pig's trotter into appropriate sizes.

6.1 Use the spatula to stir continuously, the rock sugar will become smaller and begin to melt.

7.2 Heat a little oil over low heat and add rock sugar.

8.1 Add the pig’s trotters and stir-fry until they are evenly coated with sugar color.

9.2 When the temperature rises and the rock sugar turns red, turn off the heat immediately to prevent it from burning, which will make it bitter.

10.1 Add a little light soy sauce.

11.2 Then add bay leaves, ginger slices, garlic and star anise and continue to stir-fry until fragrant.

12. Add a little dark soy sauce.

13. Add a bottle of beer.

14. Add appropriate amount of water and two full teaspoons of salt.

15. After boiling over high heat, pour into the rice cooker and cook over medium heat for 40 minutes.

16. Boil off all the water, add a little chicken stock, stir evenly with a spatula, and cook until the sauce is reduced.
