Spicy beef stew

1. Wash the beef tendon and set aside

2. Pour cold water into the pot, add 2 tablespoons of cooking wine, a few slices of ginger, boil over high heat, skim off the foam, and then remove the beef tendon.

3. Boil a pot of clean water again, add scallion, star anise, 5 slices of ginger, cardamom, cinnamon, bay leaves, licorice and peppercorns, boil and add beef tendon

4. Pour the boiled beef tendon into the pressure cooker and cook for about 25 minutes. Take it out and let it cool. When you see that the chopsticks can easily penetrate the last part of the meat, it is done.

5. Take a clean bowl, add the crushed garlic, pour in 1 tablespoon of balsamic vinegar, 2 tablespoons of steamed fish sauce, 2 tablespoons of flavored black beans, and half a tablespoon of oyster sauce and mix well (if necessary, you can add 2 tablespoons of clear soup. If it is a dry mix, there is no need to add clear soup. I added it because I was worried that the shredded cucumber would not be tasty)

6. Take out the cucumber and cut it into pieces. If you don’t know how to cut it, you can cut it into slices or shreds.

7. Slice the beef shank, put the cucumber in a bowl, then put the beef shank on top, pour in the prepared sauce, and chill for 30 minutes.

8. Take it out, sprinkle with a little chopped green onion and chili pepper, and add a few drops of sesame oil.
