How to make Cordyceps flower soaked lean meat

1. Cut the lean meat into thin slices, add a little oil, cornstarch, sugar and salt, mix well and marinate for 10 minutes (you can also make it in advance and put it in the refrigerator)

2. Soak red dates, cordyceps flowers and ginger slices in clean water for at least 1 hour (you can soak them in the morning before going out, or better yet, do it at night). 3. Place the whole pot on the stove and bring to a boil over high heat. After boiling for 5 minutes, add the marinated lean meat and bring to a boil again. Skim off the floating residue.

4. Cover the pot, turn to the lowest heat and cook for 2 minutes, then turn off the heat and let it soak for 8 minutes. Soaking is a fireless cooking method often used in Cantonese cuisine. For example, meatballs soaked in fresh vegetables, fish heads soaked in medicinal food, fish fillets soaked in chrysanthemums, etc. All dry ingredients are soaked first. Then cook the soup in a container with strong heat preservation and good sealing properties, add fresh ingredients that are easy to cook and soak them in the heat of the soup. Do not open the lid or stir the food during the process. Let the essence of the soup slowly penetrate, the fish meat will be fresh, tender and smooth, and the shape will be beautiful, and it will never be rotten due to the fire.

5. Open the lid and add salt to season. The authentic nourishing soup is ready. It is not recommended to add too strong flavor when marinating. Try adding some salt after it is done.

6. While the soup is blanching, cut some green onions and remove the soup when the time is up. Heat the pan with cold oil, sauté the scallions, add the soup ingredients, and stir-fry until fragrant. Add an appropriate amount of Lee Kum Kee oyster sauce and stir well. It takes less than 5 minutes.
