How to make black bean sauce

Many people like to eat fermented black beans. Especially for those who prefer stronger tastes, fermented black beans are a very good ingredient. There are also many ways to eat fermented black beans, and people in different regions eat fermented black beans in different ways. Some areas like to eat fermented black beans directly, while some areas like to make fermented black beans into fermented black bean sauce for consumption. So how is the fermented black bean sauce made?

1. Method 1

Ingredients: 50g fermented black beans, appropriate amount of dried chili.

1. Mix the fermented black beans with a small amount of cooking oil and steam them for 20 minutes. Crush the steamed black beans with a spoon and choose the degree of crushing according to your favorite taste.

5. Use the oil used to fry the onion and ginger to stir-fry the fermented black beans over low heat. Add crushed dried chili peppers and Sichuan peppercorns and fry until fragrant. Add the mixture of peanuts, soybean flour and sesame seeds and fry until fragrant.

6. Add dried chili powder, stir-fry until fragrant, add appropriate amount of sugar, salt and a little soy sauce. Add appropriate amount of boiling water and bring to boil. Add water and starch to thicken and remove from heat.

2. Method 2

Ingredients: 50g fermented black beans, some dried chili peppers, some peppercorns, some chili powder, some peanuts, some sesame seeds, some soybean flour, some green onions, some ginger, some star anise, some sugar, some salt, some soy sauce, some cooking oil, some water starch, some water
