5. Pour a little rice wine into the broth, then add an appropriate amount of fresh soy sauce.

7. Cut the cooked pork belly into thin slices and put it back into the broth pot.

8. Add chrysanthemum, black fungus and matsutake mushrooms, bring to a boil and stir well. Cook for about 5 minutes after the soup boils.

9. After the soup boils, season it with salt, pepper and MSG.

10. Adjust the seasoning and thicken with water starch.

11. After the sauce has gelled, reduce the heat to low and sprinkle in the egg liquid.

12. Add cucumber slices and mix well.

13. After adding the melon slices, turn off the heat and fry the pepper oil with a hand spoon.

14. After the peppercorns are fried, filter them out with a small sieve and sprinkle the peppercorn oil into the marinade pot and mix well. The marinade is now ready for use.

15. Ingredients for noodles: 500 grams of high-gluten flour, 3 grams of salt, 1 egg, and appropriate amount of water.

16. Sprinkle a little salt into the flour and add an egg and mix well.

17. Mix the dough with clean water and knead it evenly.

18. Then cover the dough with a wet towel and let it rest for ten minutes.

19. After the dough is sugared, take it out and use a dough pressing machine to press the dough three times repeatedly to make the pressed dough become fine.

20. Then press the noodles into strips and shake them out after pressing.

21. Bring water to a boil in a pot, add the pressed noodles and cook until done.

22. Put the noodles into a bowl, pour the marinade on them, mix well and they are ready to eat.
