For people in Sichuan, red oil and chili oil should be no strangers. Because basically every household should have red oil and chili oil in their refrigerator. The flavoring effect of this condiment added to some pasta and dishes cannot be ignored. Although red oil and chili oil seem to be the same variety in the eyes of many people, some people still wonder, what is the difference between red oil and chili oil?

Red oil can also be called chili oil, but it is different from the chili peppers used in the ordinary chili oil.

1. Red oil is chili oil, which is fragrant but not too spicy, and suitable for cold dishes. It is commonly used in Sichuan cuisine. Chili oil is spicy, and red oil looks good in color but is not very spicy.

2. Red oil is mainly made from Sichuan's chili peppers, vegetable oil and other spices (such as pepper, star anise, cinnamon, onion, garlic, ginger, and sugar), which are simmered over a slow fire. Red oil is Sichuan's chili oil.

3. Red oil is not very spicy, but chili oil is very spicy. The spicy taste and color are different.

4. Chili oil is made by putting chili powder into a bowl or other container and pouring boiling oil into it, while red oil is made by adding some auxiliary ingredients. The two are different in terms of spiciness and color.

1. How to make red oil:

Material:

【Main ingredients】 100g chili powder

[Seasoning] 1 large piece of ginger, 2 star anise, 3 tablespoons of peppercorns, 2 pieces of cinnamon, 500 ml of camellia oil, 4 scallions, 2 grass fruits, 3 bay leaves

1. Wash and smash the ginger, tie the green onions into a knot, and prepare the peppercorns, star anise, cinnamon and bay leaves.

2. Heat the vegetable oil in a clean pot, then turn off the heat. When it has cooled to about 40% or 50%, turn to low heat, add ginger and scallions and stir-fry until fragrant.

3. Remove the ginger and onion, add the peppercorns, star anise, cinnamon and bay leaves and continue to simmer over low heat until fragrant.

4. Pour in chili powder and stir well.

5. Stir-fry over low heat until the pepper smells fragrant.

6. Pour in 50 ml of boiling water and continue to simmer over low heat.

7. When the water in the pot is dry, turn off the heat.

8. Put the chili oil in a container, cover it and soak it overnight before eating.

2. (Secret recipe) How to make special chili oil:

【Main ingredients】 Chili pepper

[Seasoning] 10g fennel, 10g star anise, 30g sesame, 10g pepper (green pepper + red pepper), some dried chili peppers

1. Cut the dried chili peppers and chili peppers into small sections

2. Prepare pepper and fennel

3. Fry sesame seeds until golden brown

4. Remove the sesame seeds and fry the fennel and peppercorns

5. Stir-fry the chili pepper and dried chili pepper separately

6. Peppercorns and fennel should be ground separately, because the required powder thickness is different for each one.

7. Grind the chili pepper into fine powder

8. Crush the dried chili peppers into coarse powder

Put a spoonful of erjintiao, a spoonful of chili pepper, and half a spoonful of sesame seeds into a dry bowl (a bowl without any water); heat the rapeseed oil until there is no foam and blue smoke appears, then turn off the heat and cool for a while, pour the soy sauce into the bowl with the chili pepper, and the fragrant chili pepper is ready.
