Preparation: Remove the internal organs of the small wild fish and wash it clean. Add shredded ginger, salt and five-spice powder and marinate for half an hour. Stir the fish a few times during marination to allow the fish to absorb the salt. Pour flour into the small plate with the fish, stir the fish a few times to coat the surface of the fish with flour, and shake off the excess. Wrap everything up and set aside. Pour oil into the pan, heat it to 60% hot, put in the small wild fish and fry until golden brown, then remove and drain the oil. At the same time, increase the oil temperature, pour in the small fish and fry it again until each one is crispy, then remove and control the oil. Note: Since the small wild fish is small, there is no need to remove the scales, and the internal organs can be directly removed. Add some shredded ginger to remove the fishy smell when marinating, and stir from time to time to make them marinated more evenly. Fry the fish twice, fry it until cooked through the first time, and then increase the oil temperature and fry it again until crispy.

Second, ingredients: flour, small fish, peppercorns, aniseed, dried red peppers, and oil. Method: Put peppercorns (add more), star anise, and dried red pepper into a wok and fry until fragrant. Remove from the pan. Coat the small fish in dry flour, heat the oil in a pan and fry the small fish over medium heat. If you have enough time, you can fry it again to make it more crispy, but I only fried it once and it tasted very fragrant and delicious.

Make the coating: 1 egg yolk, All Purpose flour (twice the volume of the egg yolk), water (3 times the volume of the egg yolk), a small amount of salt. Use hand mixer to make a slurry. Heat a pan of oil to a depth higher than the fish. Heat the oil over high heat until it is 80% hot. Then put the marinated fish into the batter, roll it around, evenly coat it with the batter, and quickly fry it in a pan. Use chopsticks to turn the fish while frying so that it is heated evenly. When the coating turns golden brown, remove from the dish, drain the oil and place on a plate.
