1. Clean the internal organs, gills, etc. of the dace and wash it clean

2. Make a cut on both sides of the dace

3. Wipe dry and apply a layer of fine salt inside and outside

4. Peel the ginger, grind it into ginger paste, apply the ginger paste on the fish body and marinate for about 3 hours
