1. Look at the crab shell. Those with a dark green shell back with a shiny luster are thick and strong; those with a yellow shell back are mostly thin and weak.

2. Look at your belly button. People with protruding belly buttons are usually fat, while those with sunken belly buttons are usually not fat enough.

3. Look at the crab legs. Crabs with dense hairs on their legs are relatively strong, while crabs without hairs on their legs are soft and weak.

4. Look at the fullness. You can pinch the crab legs with your hands to see if they are plump, which can also help you pick good blue crabs.

5. Check the gender. Female crabs are the fattest and have plenty of roe in the eighth month of the lunar calendar, while male crabs are the most fragrant and have more fat in the ninth month of the lunar calendar. However, the season for eating blue crabs is relatively short, with October and November being the best months, while female crabs are best eaten in September of the lunar calendar.

6. Look at the vitality. Turn the blue crab over with its belly facing up. If it can quickly turn over using its stinging springs, it has strong vitality and can be preserved. If it cannot turn over, it has poor vitality and cannot be stored for long.

Blue crab, also known as crab, roe crab, red crab, mantis crab, midge, mud crab, and yellow crab. The crab's carapace is oval in shape, its body is flat and hairless, its head and thorax are well-developed, its claws are powerful, and its hind legs are shaped like oars, hence the name "oar". The width of the cephalothorax is about 1.5 times its length, and the back is raised and smooth; there is a distinct "H"-shaped indentation on the surface of the cephalothorax; the forehead has four prominent triangular teeth, which are roughly equal in size and spacing. The anterior margin has 9 protruding triangular teeth of similar size. Blue crabs are rich in protein and trace elements, and have a good nourishing effect on the body.

How to eat blue crabs

Soak the blue crabs in water first, and remember to put some white wine in it, so that the blue crabs can get drunk slowly. Then knock the blue crab unconscious. At this time, just use a spatula to tap the back of the blue crab. A hard tap will stun the blue crab. Then you can start cleaning the blue crab. The unconscious blue crab will not pinch you again. At this time, you can pick up the blue crab and brush it carefully with a brush, leaving no dead corners. This is the only way to clean the blue crab. Remember to rinse it with clean water after brushing it once. Only clean blue crabs can be eaten with confidence.
