1. Put the pot on the fire and add about one pound of soup or water. After boiling, add ginger slices, scallions, and rice wine to cook until fragrant. Use a colander to remove the residue.

2. Pour in eel pieces, mushroom pieces, and salt, and cook for about two minutes after boiling.

3. Pour the soup into a bowl, cover and let it cool (make it at noon and eat it at night, or make it in the morning and eat it at noon)

4. Put the chili rings, peanuts, fried chili, red oil, pepper powder, Maggi soy sauce, sugar, chicken essence, minced ginger, chopped green onions, sesame oil and fish sauce in a bowl and mix well.

5. After the eel pieces are cooled, pour the seasoning into the basin and soak for at least 20 minutes
