1. Wuchang fish and leftover cakes.

2. Pixian bean paste chili sauce, tomato sauce, onion, ginger, garlic and coriander, fresh chili pepper, and pork belly.

3. Remove the scales, gills and internal organs of the Wuchang fish and clean them for later use.

4. Wash the pork belly and cut into 0.5 cm slices. Slice the ginger, cut the coriander into sections, peel the garlic, cut the green onion into sections, and remove the stems of the chili pepper.

5. Heat a clean pot over a fire, wipe the bottom of the pot with ginger slices, add appropriate amount of vegetable oil and heat it up, put in the dried Wuchang fish and fry until both sides of the Wuchang fish are golden brown, then remove from the pot and set aside.

6. Heat 30 ml of vegetable oil in a clean pot, add the pork belly and stir-fry. When the pork belly changes color and releases oil, add the Pixian bean paste and millet pepper and stir-fry.

7. Add tomato sauce, onion, ginger and garlic and stir-fry.

8. Add cooking wine, light soy sauce, balsamic vinegar, sugar, appropriate amount of boiling water and Wuchang fish and bring to a boil.

9. Cut the remaining cake into diamond-shaped pieces and place them on a plate for later use.

10. When the fish is 80% cooked, add oyster sauce and MSG, mix well, and cook over high heat until the sauce is reduced.

11. A delicious Wuchang fish pancake is served.
