1. Peel and wash the potatoes, then cut them into 1-2mm thick slices (not too thin, otherwise they will burn easily). 2. Add oil to a wok and heat it to 30% hot. Add the minced meat and stir-fry until it changes color. Add the chili powder and stir-fry over low heat until it turns red. Add the scallions and stir-fry until they are fragrant.

3. Add potato slices and mix quickly, pour in light soy sauce, add sugar and salt and mix well, add pepper powder and mix well before serving
