The proportion of three-in-one noodles

As the name suggests, Sanhe noodles are made by mixing three kinds of noodles together. If you eat Sanhe noodles outside, the boss usually uses corn flour, millet flour, soybean flour, etc. to meet the needs of the public. You cannot make Sanhe noodles according to one person's taste. So you can make your own Sanhe noodles at home. As long as the proportions of the noodles are mixed well, you can successfully make delicious Sanhe noodles. The proportions of the three-in-one noodles are as follows.

1. Ingredients: 750g flour, 750g corn flour, 1800g sugar, 500g oil/lard, 400g shallots

You can also choose not to add fried black sesame seeds

Cooking steps:

1. Put the two kinds of flour in the steamer and steam until the flour cracks (about 40 minutes). While it is still hot, use a large basin to squeegee and sift the flour.

2. Fry the shallots until crispy, wait until they are cool, sprinkle the shallot oil into the cold flour, and finally mix in the sugar.

Cooking steps:

1. First, grind the peanuts into powder, add flour and stir well. Put the evenly mixed peanut powder in the steamer, cover with cloth to prevent water from dripping, and steam for 1 hour.

2. The appearance of cracks means it is done. Put oil in the pan and fry the onions until golden and fragrant. You don't need the oil anymore and save it for the next time you cook. The shallots will be used later. Heat the pan and pour all the steamed peanut powder into it and keep frying.

3. Because the peanut flour has been steamed, fry it to let it dry a little. Now, add sesame seeds, onions, and white sugar and fry again. I originally wanted to buy black sesame seeds, but I didn’t have any, so I used white sesame seeds. Take it out of the pot and let it cool down, and then put it in the jars later.

Tips:

1. Be sure to use a non-stick pan, stir-fry over medium-low heat, and keep stirring to prevent burning. Some people use sesame oil during confinement, while others use lard. Today I use ordinary cooking oil.

2. You can also add ground peanuts, white sesame seeds, etc. according to your personal preference to make it more fragrant.

3. Be sure to stir with a spoon while soaking to ensure even mixing.
